Yesterday we picked fresh produce from our garden plots. Today, we got to feast on what we picked. We also learned: Lettuce is a member of the sunflower family. The darker the lettuce the healthier it is for us (Vitamin A, C, calcium, and copper). Lettuce originated in the mediterranean. It first was a weed then was cultivated as a crop (over 6000 years ago). Columbus brought lettuce seeds on his second voyage to the Americas. There is good fiber in the lettuce spine and ribs. The average American eats 30 pounds of lettuce a year!
